I've watched some races from Australia broadcast here in the UK that included Holdens, Fords, Imprezas and Evos. Can anyone tell me what championship that is?

That would of been the australian production car championship.
In fact that would have been the GT-Performance championship but close enough. This category is a production based series but with certain modifications allowed to make them more racable such as excess trim is removed and different exhausts are allowed. The production car championship (which is run by the same group) is for lower spec cars and have more restrictions on what they are allowed to do with the cars.

The series is run by PROCAR. Includes V8 Brutes (Holden and Ford V8 Utes), Nations Cup (Lamborghini, Porsche, Ferrari, Holden Monaro 427, etc), GT Performance (Holden GT300kw, RX7, EVO VIII, 350Z, WRX), GT Production (Holden and Ford, Toyota Celica etc), Formula 3 and more.
