First you need to find the Master of Apprentices ( I think thats what they are called from memory ). They are usually located in or close to craft areas/crafthalls. Take your time and review each of the professions they offer you. Each Profession has three parts. for example Explorer gives you Tailor ( to make light and medium armour ) Forester ( you can harvest wood and boil leather ) and Prospector ( you can mine and smelt ore ).

You can only learn one profession.

Your choice will depend on what you expect to do with your profession.

a). Make cash from sales.
b) Make yourself bows.
c) Make yourself melee weapons.
d ) Make yourself Armour.
e) Make yourself consumables like traps and scrolls.
f) Make your own jewellery.
g) Make your own food.

A lot of people pick Explorer as you can usually sell the wood and ingots to make cash, plus it gives you the option to make your own armour.

So think long and hard before you pick, but remember too that you can always change your profession at a later date if you are not happy with it

Its easy for a hunter to go Woodsman, so u can make your own bow and spear, stuff like that ;]

Too bad Woodsmen are about the poorest class in-game lol...
As they have about just one producing profession (Woodworker), and perhaps Forester can get you to make some money...but the great cash amounts are in Prospecting..;) and Farming is nothing but a money sink...

I'd say to go Explorer or any other with prospecting as it's your first char and you'll be needing the money..;)
