Well, bow chants basically give a beneficial effect to you. They all are usable at level 25 after buying the passive skill for them, and they are crafted by scholars. The different types are:
Foe-finder: Performing this bow chant empowers your bow with new strength: Your arrows are more difficult to Evade. ie. -5.0% Ranged Skill Evade Chance Modifier.
Shield-bane: Performing this bow chant empowers your bow with new strength: Your arrows are more difficult to Block. -5% to ranged skill block chance modifier. *Thanks Zimoo*
Whisper-draw: Your bow skills generate less threat. ie. -10% threat generated iirc.
Wind-rider: Your bow skills cost 10.0% less power. The best one imo and should be used almost all the time.
Breach-finder: Your arrows bypass some of your targets armor. ie. -5% mitigation to your attacks. Has it's uses, especially in Ettenmoors.
Basically, you don't actually need to use them, they just help. Some are a bit situational, while others give a more holistic buff. For instance Whisper-draw is useless when soloing, and even in raids has little use when we have a threat reducing stance (and you should use wind-rider in every raid imo). Foe-finder is a bit useless also as we hit hard enough that 1-2 evades less per 10 fights doesn't really matter. For soloing purposes Breach-finder is an obvious choice, but a bit of a waste imo.
Feel free to ask anything else. :)

I believe there is also a "Shield-foe" or something bow chant, which does the same as Foe-finder except for negates 5% of block chance rather than evade.

Breach-finder and Wind-rider are the only ones I bother with, really. The former for boosting up damage when hunting bit tougher targets solo, the latter when a boss fight comes up. I hardly carry chants with me all the time, though.

If you solo, breach-finder. For fellowships/raid/instance runs, wind-rider.

I use wind-rider and breach-finder personally. Wind-rider for boss fights and breach-finder if I just generally want to kill at a slightly faster speed.
The evade/block related chants I can't see being that useful until you get an enemy that does actually block a reasonable amount of your attacks (I don't count sparring guardians :p).
Got a scholar alt i use to make these with. And the only one i found useful is whisper draw. I always carry them with me. And in fellowships i almost never get any aggro (whisper draw+stance+bow with -aggro). Always when im in fellow with another hunter, he draws tons of aggro from tank and get killed. but i can use all my skills all the time..
Remember, be nice with the tank and healer...:D get as little aggro as possible all the time..
